Spinach Pumpkin Potato Sabzi

INGREDIENTS

 

Water- 500 milliliters

Salt- 1/4 teaspoon

Potato- 250 grams

Oil- 2 tablespoons

Mustard Oil- 25 milliliters

Cumin - 1/2 teaspoon

Dry Red Chili- 2

Asafoetida- 1/4 teaspoon

Onion- 100 grams

Garlic- 1 teaspoon

Green Chili- 1 teaspoon

Pumpkin- 200 grams

Salt- 1 teaspoon

Turmeric- 1/4 teaspoon

Red Chili - 1/2 teaspoon

Spinach- 300 grams.        

Garam masala- 1/2 teaspoon

 

PREPARATION

  1. Take a pan, add 500 milliliters water, 1/4 teaspoon salt and 250 gram potatoes.
  2. Boil for 4 - 5 minutes.
  3. In another pan, add 2 tablespoons oil, boiled potatoes and sauté for 4-5 minutes.
  4. Keep aside.
  5. In a wok, add 25 milliliters mustard oil, 1/2 teaspoon cumin, 2 dry red chili, 1/4 teaspoon asafoetida, stir well .
  6. Now, add 100 grams chopped onions and cook until translucent.
  7. Then, add 1 teaspoon garlic, 1 teaspoon green chili and mix well.
  8. Add 200 grams pumpkin, 1 teaspoon salt, 1/4 teaspoon turmeric, 1/2 red chili. Mix well.
  9. Cover with lid and cook for 3 - 5 minutes.
  10. Remove the lid and give it a stir.
  11. Then, add sautéd potatoes and 300 grams spinach. Mix well.
  12. Again cover and cook for 5 - 7 minutes.
  13. Remove the lid and give it a nice stir.
  14. Now, add 1/2 teaspoon garam masala.
  15. Stir well.
  16. Remove the pan from heat.
  17. Serve hot.
