Broccoli Cheddar Soup

Servings - 2

INGREDIENTS
Water - 500 milliliters
Broccoli - 100 grams
Butter - 2 tablespoons
Onions - 40 grams
Carrots - 40 grams
Celery - 1 tablespoon
All purpose flour - 1 1/2 tablespoons
Milk - 300 milliliters
Vegetable stock - 500 milliliters
Salt - 1/2 teaspoon
Black pepper - 1/4 teaspoon
Cheddar cheese - 100 grams

PREPARATION


1. Take a pan, add 500 milliliters water, 100 grams broccoli and mix it well.
2. Bring it to a boil. Boil for 5 - 7 minutes on medium heat.
3. Remove it from heat and drain the broccoli. Keep aside.
4. Heat 2 tablespoons butter in a skillet, add 40 grams onions and fry till translucent or until it turns golden brown in color.
5. Then, add 40 grams carrots and mix it well.
6. Cook for 3 - 5 minutes on medium heat.
7. Add 1 tablespoon celery and mix it well.
8. Add 1 1/2 tablespoons all purpose flour and mix it well.
9. Cook for 3 - 5 minutes on medium heat.
10. Now, add 300 milliliters milk and mix it well.
11. Bring it to a boil.
12. Add 500 milliliters vegetable stock and mix it gain.
13. Bring it to a boil. Boil for 5 - 7 minutes on medium heat.
14. Add 1/2 teaspoon salt, 1/4 teaspoon black pepper and mix it well.
15. Then, add 100 grams cheddar cheese and mix it well.
16. Cook until the cheese is melted.
17. Now, add the boiled broccoli and mix it well.
18. Cook for 5 - 7 minutes on medium heat.
19. Serve hot.
