Chicken & Rice Stir Fry

INGREDIENTS
Boneless chicken - 200 grams
Salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Brown rice - 70 grams
Water - 750 milliliters, divided
Olive oil - 2 teaspoons, divided
Onions - 60 grams
Bell pepper - 100 grams
Mushrooms - 50 grams
Tomato - 70 grams
Salt - 1/4 teaspoon
Black pepper - 1/4 teaspoon
Tomato paste - 2 tablespoons
Dried oregano - 1/4 teaspoon
Dried basil - 1/4 teaspoon
PREPARATION
1. In a mixing bowl, add 200 grams boneless chicken, 1/4 teaspoon salt, 1/4 teaspoon black pepper and mix it well.
2. Mariante for 30 minutes.
3. In a bowl, add 70 grams brown rice, 250 milliliters water and soak for 15 minutes.
4. Take a pan, add 500 milliliters water, soaked rice and mix it well.
5. Bring it to a boil. Boil for 5 - 7 minutes on medium heat.
6. Remove it from heat and drain the rice. Wash it with water properly.
7. Heat 1 teaspoon olive oil in a pan, add the marinated chicken and mix it well.
8. Cook for 5 - 7 minutes on medium heat.
9. Heat 1 teaspoon olive oil in a skillet, add 60 grams onions and fry till translucent or until it turns golden brown in color.
10. Then, add 100 grams bell pepper, 50 grams mushrooms and mix it well.
11. Cook for 5 - 7 minutes on medium heat.
12. Add 70 grams tomato and mix it well.
13. Add 1/4 teaspoon salt, 1/4 teaspoon black pepper and mix it well.
14. Cover it with lid and cook for about 5 - 7 minutes on medium heat.
15. Open the lid and give it a nice stir.
16. Add 2 tablespoons tomato paste and mix it well.
17. Now, add the cooked chicken, boiled rice and mix it well.
18. Cook for another 5 - 7 minutes on medium heat.
19. Add 1/4 teaspoon dried oregano, 1/4 teaspoon dried basil and mix it wel.
20. Cook for another 2 - 3 minutes on medium heat.
21. Remove it from heat.
22. Serve hot.
