Sevai Custard Falooda

Servings - 4

INGREDIENTS
Water - 300 milliliters
Jelly powder - 50 grams
Chia seeds - 1 tablespoon
Warm water - 80 milliliters
Kiwi - 60 grams
Pomegranate - 30 grams
Orange - 50 grams
Red grapes - 60 grams 
Green grapes - 40 grams
Apple - 40 grams
Milk - 80 milliliters
Custard powder - 2 tablespoons
Ghee - 35 grams 
Vermicelli - 80 grams
Milk - 500 milliliters
Sugar - 80 grams
Almonds - for garnishing
Pistachios - for garnishing

PREPARATION


1. Heat 300 milliliters water in a pan, add 50 grams jelly powder and mix well. Boil for 3 - 4 minutes.
2. Remove from heat and transfer thus into a moulder. Rest for 1 hour.
3. In a bowl, add 1 tablespoon chia seeds, 80 milliliters warm water and mix well. Soak for 15 - 20 minutes.
4. In a bowl, add 60 grams kiwi, 30 grams Pomegranate, 50 grams orange, 60 grams black grapes, 40 grams green grapes, and 40 grams apple. Mix well.
5. In a bowl, add 80 milliliters milk, 2 tablespoons custard powder and mix well. Keep aside.
6. Heat 35 grams ghee in a pan, add 80 grams vermicelli, and roast until golden brown.
7. Add 500 milliliters milk and mix well. Then, add 80 grams sugar and stir well until the sugar is completely dissolved.
8. Add prepared custard mixture and mix well.
9. Now, take the prepared jelly and cut into pieces.
10. In a serving glass, add the soaked chia seeds, prepared vermicelli, mixed fruits, and prepared jelly. Repeat the process for the second layer.
11. Garnish with almonds and pistachios.
12. Serve.
