No Sugar Mango Makhana Custard

Servings - 4

INGREDIENTS
Warm milk - 60 mililiters
Saffron - 1/2 teaspoon
Fox nuts - 30 grams 
Milk - 500 mililiters
Cardamom powder - 1/4 teaspoon
Seedless dates  -  50 grams 
Mangoes - for garnishing
Cashews - for garnishing
Pistachios - for garnishing

PREPARATION


1. In a bowl, add 60 mililiters warm milk, 1/2 teaspoon saffron and mix well. Soak for 30 minutes.
2. In a pan, add 30 grams fox nuts and dry roast for 3 - 4 minutes over medium heat.
3. Remove from heat and keep aside.
4. In a pan, add 500 mililiters milk and stir well. Bring it to a boil.
5. Add 1/4 teaspoon cardamom powder, the soaked saffron milk and stir continuously for 4 - 5 minutes.
6. Remove from heat and pour this mixture into a bowl, add roasted fox nuts and 50 grams seedless dates. Mix well and soak for 20 - 30 minutes.
7. Transfer the soaked mixture into a blender and blend until smooth.
8. Transfer the blended mixture into a bowl and refrigerate for 2 hour.
9. Pour the prepared custard into serving glass. Garnish with mangoes, cashews and pistachios.
10. Serve.
