Sabudana Bubble Tea

Servings - 4

INGREDIENTS
Sago - 150 grams
Water - 300 milliliters
Strawberries - 70 grams
Black tea - 300 milliliters
Condensed milk - 100 grams
Water - 1 litre
Jaggery powder - 70 grams
Water - 45 milliliters
Powdered sugar - 100 grams

PREPARATION


1. In a bowl, add 150 grams sago and 300 milliliters water. Soak for 30 minutes.
2. Place 70 grams strawberries on a board and chop them into pieces. Keep aside.
3. In another bowl, add 300 milliliters black tea and 100 grams condensed milk. Whisk well to combine and keep aside.
4. In a pan , add 1 litre water and soaked sago. Stir well and bring to a boil for 3 - 4 minutes.
5. Remove from heat and keep aside.
6. In a separate pan, add 70 grams jaggery powder and 45 grams water. Cook for 2 - 3 minutes over medium heat.
7. Add boiled sago to the jaggery mixture and cook for an additional 1 - 2 minutes. Remove from heat.
8. In another pan, add chopped strawberries, 100 grams powdered sugar and cook till it turns into a compote.
9. Remove from heat and let it cool for 30 minutes.
10. In a serving glass, add the prepared sago, strawberry compote, ice cubes, and the prepared tea. Stir well.
11. Serve.
